As it has been pretty warm lately, frozen yoghurt is the perfect treat to enjoy. My favourite frozen yoghurt that I have made is a Forest Fruits Frozen Yogurt. This is super refreshing and a perfect treat for summer afternoons. This recipe can be a bit sharp, but adding a few tablespoons more of honey does make the frozen yogurt a bit sweeter.
This is my own recipe, and I have edited it each time I have made it, trying and get the recipe just right to share!
Forest Fruits Frozen Yogurt
1 tsp vanilla extract
5 tbsp runny honey
300g frozen forest fruits
500ml fat-free Greek yogurt
1. Blend the frozen forest fruits in a food processor, add the Greek yogurt and blend until the mixture is smooth and coloured all the way through with a lovely rich pinky-purple.
2. Add the vanilla extract, honey, and sugar. Blend until fully combined.
3. Pour the yogurt mixture into a tub and seal the top. Place in the freezer until the yogurt is almost frozen and scoopable.
4. Alternatively, if you have an ice cream maker, pour the mixture into an ice cream maker and churn for 30 minutes until thickened. Place in the freezer until almost frozen.
Scoop into bowls and serve with frozen berries or a drizzle of honey.
