Recently I have seen other food bloggers and foodies on Pinterest and Instagram make Mug Cakes. I had a search around for the best mug cake recipes, and found a few that I liked the look of. I quickly found that mug cakes consisted of the same base ingredients; and then could be hypothetically be made with everything but the kitchen sink. So I made this chocolate chunks mug cake!
I made this mug cake for the first time, so I adapted a simple recipe to start with to make sure the recipes worked. Also to make sure my microwave didn’t implode in a very sticky mess; and I didn’t end up plastered in a poor excuse for cake. I decided simple was best.
After I made this chocolate chunks mug cake I was very pleasantly surprised!

Chocolate Chunks Mug Cakes
4 tbsp self-raising flour
2 tbsp dark muscovado sugar (or brown sugar)
1/4 tsp baking powder
3 tbsp milk
1/2 tbsp golden sugar
1/2 tbsp vegetable oil
25g dark chocolate chopped into chunks
1. Mix all the ingredients except from the dark chocolate chunks in a mug or an oversized teacup, mix with a small sturdy whisk until smooth.
2. Stir in half of the chocolate chunks into the batter, then sprinkle the other half over the top.
3. Cook in the microwave for 1 minute at full power. Let it cool for a few minutes before you eat all of it.
Best served warm with a dusting of icing sugar.
