I’ve really jumped on the mug cake band-wagon. For lunch one day in the last few weeks or so, I made a few mug cakes for my family, including 2 of my Chocolate Chunks Mug Cakes. I made up a little recipe for lemon mug cake; and they are really delicious!
I’m sure this recipe would be even better with a lemon curd in the centre of the mug cake while it’s hot.
Lemon Mug Cake
4 tbsp self-raising flour
1/4 tsp baking powder
1 large egg
2 tbsp grated lemon zest
1 tbsp lemon juice
1 tbsp icing sugar
3 tbsp granulated sugar
3 tbsp milk
1. In an oversized teacup, or a mug mix together; the flour, baking powder, lemon zest, granulated sugar, egg, milk, and lemon juice. Mix until smooth and silky, like cupcake mixture.
2. Cook in the microwave for a minute, until it is soft and spongy.
3. Dust the top with icing sugar.
Best served warm,
